This recipe will make enough homemade pancakes to feed 4 people. Of course, our family triples it so we can have enough to feed teens and have a few leftover. This recipe could be used for a sleepover breakfast, club breakfast, 4-H fundraiser breakfast, scout breakfast, etc.

Homemade Pancakes Recipe
2 eggs
2 1/2 c. milk
2 1/2 Tbsp. vinegar
1 tsp. baking soda
2 tsp. sugar
3 tsp. baking powder
1 tsp. salt
4 tsp. olive oil
1/2 tsp. vanilla extract
2 1/2 c. flour
Beat all ingredients (except flour) together until smooth in your KitchenAid mixer. Add flour and mix well. Heat a griddle to 375 degrees F. (I grease my very large Presto griddle or use a cooking spray) Pour 1/2 cupfuls onto the griddle and let it spread into a circle before pouring the next one. When there are many bubbles in a pancake, flip it over to the other side, wait about 45 seconds, then lift up a corner to see if it looks a bit browned, then flip onto a serving plate. Add your favorite toppings (mine is Skippy Peanut Butter and Pancake Syrup) and enjoy!
